Pumpkin spice oatmeal


Fall and pumpkin season is officially upon us ๐ŸŽƒ๐Ÿ๐Ÿ‚๐Ÿƒ๐Ÿ˜€

I made this incredibly creamy and so delicious pumpkin spice steel cut oatmeal for this chilly and rainy morning.

โœ…1/2 cup soaked (overnight) steel cut oats or any leftover cooked oatmeal โœ…1/4 cup water or milk โœ…1/4 cup pumpkin purรฉe โœ…1/2 tsp pumpkin spice โœ… half ripe mashed banana โœ… 1 tsp vanilla extract โœ… 1 scoop of plain protein powder or 2 TBS of collagen

Mix all above ingredients in a small pot, cook on medium heat until creamy - about 5 minutes.

Serve with a handful of nuts and a sliced banana (the other half).

You can also make a bigger batch and store in the fridge for a couple of days. Reheat with a bit of water or milk.
