The only BANANA PANCAKES recipe you need (only 3 ingredients!)
The only thing you may need to know that these pancakes are as CLEAN as it gets and on top of that they are absolutely AMAZING and super easy to make.
I have them for breakfast at least 3 times a week because they are DELICIOUS and really don't take much time to put together.
You would be glad to know that these babies require only 3 main ingredients: 1 banana, 2 eggs and 1 tablespoon of coconut flour.
They are also refined-sugar free, gluten free, grain-free, vegan.
If you don't have any coconut flour, you can still make them with just 2 eggs and a banana, however they will be a lot thinner.
The coconut flour makes all the difference.
They were a lot thicker, fluffy and way more filling. I was thrilled with the result.
I serve these with cottage cheese or greek yogurt so that the overall calories are about 450 calories with over 30 g of protein.
Banana pancakes - gluten free, refined-sugar free, grain free, vegan
Prep time: 2 minutes
Cooking time: 10 minutes

1 medium ripe banana
2 large eggs
1 tablespoon coconut flour (like this one)
cinnamon to taste
a dash of baking powder
handful of nuts (optional)
coconut oil for the pan
1. In a small bowl, mash the banana (sprinkled with cinnamon) well with a fork.
2. Add eggs and mix well.
3. Add coconut flour and baking powder and mix well.
4. Melt some coconut oil in a non-stick frying pan set on medium. Wait till it's hot enough before you pour the batter into it.
5. Spoon the batter out on the pan - I made 5 pancakes out of the batter.
For even quicker option follow steps 1-3 then pour the batter into a round, non-stick, greased pie dish and bake for 10 minutes on 350 F.
It will look like a one giant pancake (see picture below) about 1/2 inch thin.
For a pumpkin spice version of this recipe, add 1-2 TBS of organic pumpkin puree and 1 tsp pumpkin spice to the mix, and bake as usual.
