Baked zucchini & prosciutto bites

This recipe came to me when I was hungry grazing around the kitchen waiting for my husband to come home. I still had 2 hours before we would eat dinner, yet I was so hungry that the usual glass of water and a walk outside wouldn't do the trick.

So I peaked inside the fridge and found a zucchini that was starting to look pretty sad.

I peeled it, sliced it, decorated with 1 prosciutto slice, sprinkled some aged parmesan and baked for 10 minutes in the oven. Before I served it, I sprinkled a tiny bit of TJ's chili lime seasoning on it.

Honestly guys, it blew my mind how yummy this was!!!

It looked very fancy yet so easy to make. Next time you need a snack or you're hosting a party and wonder what to make as an app - make that!

Baked zucchini & prosciutto bites

Prep: 3 minutes

Cooking time: 10 minutes

Servings: 1

Calories per serving: 119 calories (6.6 g fat, 3.5 g carbs and 9.9 g protein)


  • 12 slices of zucchini, about 3/4 of medium sized zucchini (sliced about 3/4 inch thick)

  • 1 slice nitrate free prosciutto, divided into 12 pieces

  • 0.5 oz shredded aged parmesan cheese


  • Pre-heat the oven to 375 on convection.

  • Line a flat sheet with parchment paper.

  • Place zucchini slices on top of it.

  • Place prosciutto pieces on top of zucchini slices and sprinkle with cheese.

  • Bake for 8-10 minutes.

  • Sprinkle with additional seasoning (such as Chili and Lime) and serve hot.
